Few people can afford to stand in the kitchen for hours and cook their favourite dishes. No wonder then that recipes for quick, simple and minimalistic dishes are becoming more and more popular. We present the best of them!

1. Potato dumplings

Potato dumplings are a great option for a healthy, tasty dinner. This dish consists of just 4 ingredients:

  • 2 yams;
  • 1/2 cup parmesan cheese;
  • 1/2 cup potato flour;
  • a few tablespoons of wheat flour.

Wash and cut yams and roast for about half an hour until tender. Then cool them, peel and crush with a potato masher to a smooth paste. Add flour and Parmesan cheese and knead. Roll out a thin sheet and cut out patties about 1.5-2 cm long

At this time boil water with salt and throw the kopytka into it. It is important to stir constantly, because they may stick to the bottom. Remove after a few minutes. Before serving, the dumplings can be sprinkled with Parmesan cheese. Ready!

2. Pasta with spinach

Another healthy and nutritious dish just in time for summer is pasta with spinach. It is perfect for people who do not have time for long cooking. You will need:

  • a package of pasta of your choice (it can be whole grain – it will be healthier);
  • onion;
  • half a tablespoon of butter;
  • 200 g frozen spinach;
  • 200 g 18% cream;
  • salt and pepper.

Cook pasta. Cut peeled onion into cubes and fry in a pan, adding butter. Add the spinach and pour a little water into the pan. Heat the whole dish under the lid, then strain the excess water. Pour in the cream, season and boil. Pour the sauce over pasta and sprinkle with cheese. Enjoy!

3. Zucchini tagliatelle soup

Zucchini is one of the favorite summer vegetables. It is nutritious, healthy and very tasty. A great idea for dinner is soup with zucchini tagliatelle, which is made in just a few minutes. You will need:

  • 1.5 kg of fresh zucchini;
  • 4 potatoes;
  • 1 onion;
  • half a bunch of parsley;
  • 100 ml cream;
  • tbsp. butter;
  • spoonful of olive oil;
  • spices: allspice, bay leaf, salt and pepper.

Cut the onion into medium-sized cubes and fry in butter or oil. Cut the zucchini into coarse cubes (leave the long half for pasta) and the peeled potatoes into small cubes. Put zucchini aside, put potatoes in a pot, pour water. Add the onion, chopped parsley and spices and cook for about 15 minutes

Then add the zucchinis and cook for another 10-15 minutes until they are soft. After this time whiten the soup with cream and mix to a cream. Season to taste. Using a vegetable peeler, cut thin, long slices of uncut zucchini, which you put into the hot soup a few minutes before serving (the idea is to make them soft). Enjoy!

4. Roasted Shanks with Broccoli

Summer dinner is all about the power of fresh vegetables, which are especially readily available during this period. Broccoli is a very popular one. To make shanks with broccoli you should prepare:

  • 6 chicken drumsticks;
  • 2 bags of rice;
  • 2 onions;
  • broccoli;
  • a tablespoon of butter;
  • some bread crumbs;
  • seasonings: sweet paprika, salt, pepper, rosemary, herbes de Provence.

Rinse the chicken drumsticks and coat in spices – paprika, herbs, rosemary, salt and pepper (you can also use a ready mix for chicken – it will be even faster). Place the chicken in the oven and roast for over an hour until tender. Cook rice according to the instructions on the package. Place broccoli florets in hot water and cook until tender, about 7-10 minutes. Place the roasted chicken on the cooked rice. Place the broccoli next to it. Pour the butter and breadcrumbs over the whole dish. Enjoy!

5. Pasta with spinach and olives

Italian cuisine tastes great especially in summer. This is why pasta with spinach and olives is a perfect dish for both lunch and a romantic dinner. To prepare this dish you will need:

  • half a package of penne pasta;
  • 200 g of spinach;
  • a dozen or so black olives;
  • a dozen cherry tomatoes;
  • 10 g of grated yellow cheese;
  • 2 tablespoons of butter;
  • seasonings: salt, pepper, garlic and rosemary.

Cook pasta so that it is al dente. Melt the butter in a frying pan and throw in the spinach. After 2 minutes, season it with salt, pepper, rosemary and garlic. Then throw in the halved tomatoes and olives. Fry for another 2-3 minutes, sprinkle with cheese and mix. Arrange the whole on the pasta. Ready!
